Ingredients

  • 2–3 pound beef roast (round, chuck, rump, or brisket)
  • 8 ounces mushrooms, sliced
  • 1 small onion, sliced
  • 2 garlic cloves, minced
  • 1/2 cup bone broth or low-sodium beef broth
  • 1 1/2 teaspoons salt
  • 1 teaspoon rosemary
  • 1/2 teaspoon pepper
  • 1 tablespoon oil (for Instant Pot or optional pan sear)

Instructions

Slow Cooker

Optional: Heat a little oil in a large pan over medium-high heat. Season the roast with garlic powder, salt, rosemary, and pepper. Sear the roast for a few minutes per side until browned, then remove. Sauté mushrooms, onions, and garlic until softened and deglaze the pan with a splash of broth, scraping up browned bits. Transfer everything to the slow cooker and continue with step 1.

  1. Season the roast with garlic powder, salt, rosemary, and pepper. Place the roast in the slow cooker and add the garlic, mushrooms, and onions.
  2. Pour the broth over the roast and vegetables.
  3. Cook on HIGH for 3–4 hours or LOW for 6–8 hours, until the meat is fork-tender.

Instant Pot

  1. Select Sauté on the Instant Pot and heat the oil.
  2. Season the beef with garlic powder, salt, rosemary, and pepper. Sear the beef 2–3 minutes per side until browned, then remove and set aside.
  3. Add mushrooms, onion, and garlic to the pot and cook 2–3 minutes, stirring frequently.
  4. Add the broth and deglaze the bottom of the pot by scraping up any browned bits with a wooden spoon.
  5. Return the beef to the pot. Close the lid and set the valve to seal. Cook on high pressure for 35 minutes. Allow a natural pressure release for 10 minutes, then release any remaining pressure manually.
