Try these quick, healthy baked radish chips — a simple way to rediscover this underrated vegetable.

Radishes are often overlooked at the grocery store. Unlike potatoes or broccoli, they rarely get more attention than a few slices tossed into a salad. Yet when prepared as baked chips, radishes take on a new life — crisp, flavorful, and surprisingly addictive.

These baked radish chips are an easy variation on other vegetable chips like kale or apple chips, and a lighter alternative to traditional potato chips. They require minimal prep and only a few ingredients, making them a convenient, healthy snack or side dish.
Radishes do shrink as they bake, so you may want to make a generous batch — they disappear quickly. The result is a crunchy snack with a mild, slightly peppery flavor that pairs well with dips or stands on its own. If you’re curious about new ways to enjoy produce, give these a try the next time you see a bunch of bright red radishes in the produce section.

Ingredients
- 2 1/2 cups (about 15 radishes), thinly sliced
- Non-stick olive oil spray
- Pinch of salt
Instructions
Preheat the oven to 375 degrees F (190 degrees C).
Thinly slice the radishes and arrange them in a single layer on a non-stick baking sheet. Lightly spray the slices with non-stick olive oil spray. Bake for 15 minutes, then flip each slice and return to the oven for another 10–15 minutes, or until the edges are crisp and golden. Remove from the oven and sprinkle lightly with salt. Allow to cool briefly — the chips will crisp further as they cool.
