Vegan Blueberry Cheesecake Popsicles Recipe

I had been putting this recipe off for a while — partly because I didn’t want to clean the food processor — but it turned out I only needed one bowl and nine ingredients. I was tired and run down after getting up early with my almost four-year-old and teaching a spin class that morning, so I wanted something quick, simple, and satisfying. These popsicles fit the bill perfectly.

The result was creamy, fruity popsicles that are absolutely delicious. They’re easy to make: a quick blend in the processor, a few fresh berries at the bottom of the molds, and a crunchy graham-cracker-style topping. These taste like mini frozen cheesecakes on a stick.

Ingredients:

1 cup vegan cream cheese

1/4 cup vegan Greek-style yogurt or vegan sour cream (I used Daiya blueberry Greek-style yogurt)

1/3 cup chilled coconut cream (I used Trader Joe’s)

3/4 cup powdered sugar

3/4 cup frozen blueberries

1/3 cup graham crackers, crushed into crumbs

2 tablespoons vegan butter (I use Earth Balance)

Optional: a few fresh blueberries to place in each pop (I used three per pop)

Directions:

1. In a food processor, combine the vegan cream cheese, vegan yogurt or sour cream, chilled coconut cream, powdered sugar, and frozen blueberries. Blend until the mixture is smooth and well combined. Leave the graham crumbs and vegan butter aside for the crust.

2. Place a few fresh blueberries into the bottom of each popsicle mold.

3. Spoon the cheesecake mixture into the molds, filling them and leaving about an inch at the top for the crust layer.

4. In a small bowl, mix the graham cracker crumbs with the vegan butter until the crumbs are evenly moistened and hold together slightly. Spoon the crumb mixture on top of each filled mold to form the crust. Insert sticks.

5. Freeze the pops for at least 6 hours, or until fully set. To release, run the molds briefly under warm water and gently pull out the popsicles.

These vegan cheesecake pops are creamy, fruity, and simple to prep. They make a refreshing snack or a light dessert, and they’re especially handy when you want something impressive with minimal effort.
