I tend to rotate the same few breakfasts: eggs, smoothies, and oatmeal. When I start considering elimination diets for digestive health, two of those options can disappear quickly. That nudged me to explore breakfast alternatives — like chia pudding.

Shamrock Shake Chia Seed Pudding Recipe

Chia pudding is a great make-ahead breakfast: simple to prepare, easy to customize, and thick and creamy when left overnight. For this version I blended the base into a smooth, minty “shake” before adding the chia so the color and texture are vivid and uniform — a Shamrock Shake inspired pudding that’s actually full of real food.

I’ll admit I’ve probably never had an original Shamrock Shake in recent years, but I do know the flavor profile: minty, sweet, thick, and very green. This recipe echoes those traits while using spinach, almond milk, banana and chia seeds for a nourishing breakfast that still feels like a treat.

Overnight Shamrock Shake Chia Pudding

Ingredients

  • 1 cup unsweetened vanilla almond milk
  • 1 banana, peeled
  • 1 cup fresh baby spinach
  • ¼ teaspoon pure mint extract
  • ½ teaspoon vanilla
  • ¼ cup chia seeds

Instructions

  1. Place all ingredients except the chia seeds in a blender and blend on high for 1–2 minutes, until smooth and fully combined.
  2. Pour the blended mixture into two jars or containers, stir in the chia seeds, and seal with lids. Refrigerate overnight to thicken.

While you could blend everything and eat it immediately, allowing the mixture to sit overnight yields a thicker, more pudding-like texture and makes busy mornings easier. For a mint chocolate chip variation, add a scoop of chocolate protein powder or a few dark chocolate chips before chilling.

This pudding is vegan, naturally gluten-free, and easy to scale up for more servings. It’s bright green from the spinach but mild in flavor — the banana and mint keep it sweet and refreshing.

Serve cold from the fridge, topped with extra fruit, chopped nuts, shredded coconut, or a few chocolate chips if you like.
