How to Make a Grilled Patty Melt

Patty melts are straightforward but require attention to two key elements: deeply caramelized onions and a well-seared beef patty. Start by thinly slicing the onions and cooking them low and slow in butter for about 20–25 minutes until soft and golden brown. You can make the onions ahead of time to save hands-on minutes when it’s time to assemble sandwiches.

Sliced onions are cooked until browned for the patty melt.

Season ground beef lightly with salt, pepper, a pinch of garlic powder, and a few dashes of Worcestershire sauce. Shape the meat into slightly oblong patties so they fit a slice of rye bread more naturally — this is the traditional bread for a patty melt, though sourdough works well too.

Cooking the Beef

Preheat a grill pan, cast-iron skillet, or outdoor grill until very hot to get a quick crust on the patties. Cook the beef on medium-high until it reaches your preferred doneness. Transfer cooked patties to a paper towel-lined plate to drain excess grease.

When ready to assemble, butter one side of each slice of bread (butter side out, like a grilled cheese). On the unbuttered side, place the cooked patty and top generously with the caramelized onions. Add Swiss cheese on top of the onions; if you want extra cheese, place a slice on the bread before the patty and another on top.

Grilling the Sandwich

Top the assembled sandwich with the remaining buttered slice of bread, butter side facing out. If you like, spread Thousand Island dressing on the inner side of the top slice for a classic diner touch. Cook the sandwich on low to medium heat, flipping when the underside is golden and crisp. Continue until both sides are golden, the cheese is melted, and the sandwich is heated through.

Serve and Enjoy

Remove the patty melts from the pan, slice them in half, and serve with extra Thousand Island dressing or ketchup for dipping. Add a side of fries for a classic diner-style meal. The combination of perfectly caramelized onions, a seared beef patty, crisped rye bread, and melted Swiss cheese is what makes this sandwich so irresistible.

This recipe is simple, rewarding, and perfect for lunch or dinner. The most important step is taking the time to caramelize the onions properly — they add depth and balance to the rich beef and cheese.
