Creamy Raspberry Overnight Oats Recipe for Quick Breakfast

Mornings are a breeze when you prep breakfast the night before… Raspberry Overnight Oats are healthy and filling!

Raspberry Overnight Oats

At a spinning class last week the instructor asked for simple breakfast ideas for early mornings when she teaches. It was fun to hear everyone’s go-to: some prefer yogurt or cereal, while others want a heartier plate of eggs, bacon, and toast.

My favorites are overnight oats and avocado toast. When I mentioned overnight oats, the woman next to me was fascinated — she couldn’t imagine eating oats cold. Overnight oats are one of those easy habits that win you back precious morning minutes.

Raspberry Overnight Oats

Overnight oats have been my go-to since grad school, when I needed a filling, healthy breakfast between early workouts and classes. I love traditional cooked oatmeal, but it wasn’t always possible when I went straight from the gym to campus. Preparing oats the night before solved that problem and has stuck with me ever since.

My usual mix is old-fashioned oats, almond milk, chia seeds, a pinch of cinnamon, and a little salt. In the morning I warm a little honey and peanut butter, stir it in, then top with banana or frozen berries. It’s satisfying, nutritious, and easy to customize.

These Raspberry Overnight Oats are a simple, tasty twist. The base is the same — oats, chia, and almond milk — but I stirred in a spoonful of raspberry jam before refrigerating. In the morning I layer in fresh raspberries for bright flavor and color.

For texture and extra protein, sprinkle chopped almonds, walnuts, or pecans on top. I thought of this after photographing the jars, but before digging in — the crunch complements the creamy oats beautifully. A drizzle of almond butter would also be delicious.

Layering the oats and raspberries gives the jar a parfait-like feel, which makes breakfast feel a little more special. I enjoyed this variation and plan to rotate it into my routine, especially when fresh berries are in season.
