I prefer simple recipes that deliver big flavor in a short time. This brown sugar milk tea takes about 10 minutes and requires just a handful of ingredients: strong black tea, brown sugar, milk and optional heavy cream. It’s modest, comforting, and perfect for turning a dreary morning into something brighter.

Tapioca Pearls

This recipe does not include tapioca pearls. If you want a boba-style drink, try a dedicated bubble tea recipe instead. If you prefer a pearl-free version, read on.

What Tea Should I Use?

Black tea is my first choice for this drink because it gives a bold, full-bodied flavor that pairs well with milk and brown sugar. Assam or an Assam-forward blend works especially well thanks to its strength and malty notes. You can experiment with oolong or green tea for different flavor profiles, but the result will be lighter.

Keep in mind that black tea contains caffeine, so this iced milk tea can boost alertness—avoid it right before bed if you’re sensitive to caffeine.

Brown Sugar and Milk Substitutions

Brown sugar. I use packed brown sugar because it contributes depth and a caramel-like sweetness. You can swap a low-calorie sweetener if needed, but the flavor will change.

Milk. For a dairy-free version use unsweetened cashew or almond milk; they work best because they complement the tea without overpowering it. I don’t recommend coconut milk here because its distinct flavor can compete with the tea.

How To Make It

This is a straightforward recipe. The keys are a strong brew and properly cooled tea so the drink stays balanced when combined with ice and milk.

Brew the black tea. Boil water and pour it over the tea bags or loose leaves. Steep for 5 minutes to extract a robust flavor, then let the tea cool for about 10 minutes.

Add brown sugar. Remove the tea bags or strain out leaves, then stir in the brown sugar until fully dissolved. Use light or dark brown sugar according to your preference.

Add milk and optional heavy cream. For the creamiest texture use whole milk. If you want extra richness, add a small amount of heavy cream. For vegan versions, use almond or cashew milk and omit the heavy cream.

Froth the cream (optional). If using heavy cream, reserve about 1/4 cup plus a little extra, add a teaspoon of cooled tea, and whip just until lightly frothed. You want a soft foam that will blend into the drink rather than sit as stiff peaks on top.

Tips For Making The Best Drink

  • Brew a strong black tea for full flavor—don’t rush the steeping time;
  • If making a non-dairy version, skip the heavy cream and use almond or cashew milk for a creamy result;
  • If you want a lower-carb alternative, look for a brown-sugar-flavored zero-calorie sweetener that mimics the caramel notes;
  • To avoid diluting the drink, freeze leftover brewed tea into ice cubes and use those instead of plain ice.

Can I Make This Recipe Ahead?

Yes. Store cooled sweetened tea mixed with milk in a sealed jar or container in the refrigerator. Add whipped cream only just before serving if you plan to use it. Properly stored, the milk tea keeps for up to three days, though it’s best enjoyed fresh.

Is There Caffeine In Milk Tea?

Yes—if you use regular black tea, the drink contains caffeine. Choose decaffeinated tea if you want a caffeine-free version.

Can I Make It Without Heavy Cream?

Absolutely. The drink is still excellent with milk alone. Whole milk gives a naturally smoother mouthfeel; heavy cream simply adds extra richness and a frothy topping if you like that texture.

Storing

Keep leftovers refrigerated in a jar or sealed container. Milk tea stored correctly will stay good for up to three days. For best flavor and texture, prepare the drink close to when you plan to drink it.

Calories: 489 kcal

Ingredients

  • 2/3 cup water
  • 3 black tea bags (or 1 tbsp loose black tea)
  • 1 1/3 cups cold whole milk
  • 1/4 cup heavy cream plus 2 tbsp (optional)
  • 2 tbsp packed brown sugar

Instructions

  1. Bring the water to a boil using a kettle or stove.
  2. Place the tea bags or loose tea in a cup and pour the hot water over them. Steep for 5 minutes for a strong brew.
  3. Remove the tea bags or strain the leaves, pressing gently to extract liquid. Stir in the brown sugar until dissolved, then allow the tea to cool to room temperature.
  4. If using heavy cream, combine 1/4 cup cream with 1 teaspoon of the cooled tea and whip until lightly frothed—soft foam is ideal.
  5. In a jar, combine the cold milk with the remaining heavy cream (if using). Add the sweetened cooled tea and mix well.
  6. Fill a glass halfway with ice, pour the milk tea to fill the glass, top with the frothed cream if desired, and serve.

Notes

If you want an even stronger drink, freeze brewed black tea in an ice tray and use those tea ice cubes. To cool brewed tea faster, cover it and place it in the refrigerator. You can substitute plant-based milks and vegan cream alternatives, but expect slight flavor differences. This recipe is moderately sweet; add an extra tablespoon or two of brown sugar if you prefer it sweeter.
