Spending a hot summer in the Middle East as an aid worker was not always easy. The desert’s dry heat could feel suffocating, and electricity was often unreliable in the overcrowded town where we stayed. One evening we went to the shopping center for pizza, and I tasted the most refreshing drink I’d ever had: a frozen mint lemonade they called “lemonada.” From that moment I wanted to recreate it at home. This frozen strawberry mint lemonade captures that same cool, bright flavor. It’s perfect for summer gatherings, picnics, pool parties, or any hot afternoon when you want a fruity, minty frozen treat. Frozen Strawberry Mint Lemonade

Ingredients
- 1 cup water *see note
- 3/4 cup apple mint or spearmint tea leaves packed
- 8 oz. hulled strawberries roughly 1 1/2 cups
- 1/4 cup freshly squeezed lemon juice
- 1/3 cup sugar add to taste
- 12 large ice cubes *see note

If you don’t have fresh apple mint or spearmint tea, see the note for using a peppermint tea bag. To make mint tea from fresh leaves, wash them well and bring one cup of water to a boil in a small saucepan. Add the packed mint leaves, remove from heat, cover, and steep for 40 minutes. Strain and discard the leaves.

Add hulled strawberries, the strained mint tea, sugar, freshly squeezed lemon juice, and ice cubes to a large blender. Blend until the strawberries are smooth and the drink has a frozen, slushy texture. Adjust ice and sugar to taste.

Serve immediately and enjoy.
Notes
Adjust sugar and ice to achieve your preferred sweetness and thickness. Ice from trays can be larger than machine ice—add or remove cubes as needed to reach the frozen consistency you like.

- Blender — any standard blender works well to puree the strawberries into a smooth frozen drink.
- Citrus juicer — makes extracting fresh lemon juice quick and easy.
- Saucepan — useful if you steep fresh mint leaves; steep the leaves in boiled water and cover while they cool.
- Paring knife — handy for hulling and prepping strawberries.

Ingredients needed for this Frozen Strawberry Mint Lemonade: Sugar, lemon, apple mint or spearmint tea leaves (or peppermint tea), water, and strawberries.

Note
I prefer apple mint (also called woolly mint) because its sweet, mellow mint flavor pairs beautifully with strawberries and lemon. If you can’t find apple mint, peppermint tea bags are an easy and flavorful alternative.

Step 1–2: Brew mint tea with fresh mint leaves or steep a peppermint tea bag as directed above. Place the remaining ingredients in the blender and pour the freshly steeped (and cooled) tea over them.
Note
Make sure the tea is at room temperature or chilled before blending. If you need a thicker, slushier texture, add extra ice and blend until you reach the desired consistency.

Step 2: Blend until the strawberries are fully pureed and the drink is smooth and frozen.

Step 3: Serve immediately and enjoy.
Serving options:
Garnish with lemon slices or fresh strawberry slices for a pretty presentation. If you’re transporting the drink to a picnic, keep it in a cooler and consider blending in a few extra ice cubes to help it stay cold longer. The frozen texture may soften over time, but it remains delicious poured over ice.
