It’s about time another roasted vegetable appeared on the blog. I’ve said many times how much I love roasting — you’ve already seen roasted sweet potatoes, cauliflower, Brussels sprouts, and crispy tofu.
Now add broccoli to that list.
Roast your broccoli until it’s caramelized and slightly crisp. Make it garlicky — simple, bold, and delicious.
Roasted Garlicky Broccoli
Serves 2
Ingredients:
1 head fresh broccoli, cut into florets
1 clove garlic, minced
Light sprinkle of red pepper flakes (optional)
Juice of 1/2 lemon
Pinch of kosher salt
Olive oil for tossing
Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or aluminum foil for easier cleanup. This recipe doesn’t require precision — trust your instincts. Toss the broccoli florets lightly with olive oil, then add the minced garlic and a pinch of red pepper flakes if you like a little heat. Spread the florets in a single layer on the baking sheet so they roast evenly.
Roast for 20–25 minutes, until the tops turn golden brown and the edges are crisp. Remove from the oven while still warm, squeeze the lemon over the broccoli, and finish with a pinch of kosher salt. Serve immediately and enjoy the contrast of tender stems and crisp, caramelized florets.
