Cheesy Stuffed Breadsticks Recipe for Gooey, Pull-Apart Bread

I love wrapping fillings in dough and baking them—think Turkeys in Sleeping Bags or Ham and Broccoli Pockets—so these Cheese Stuffed Breadsticks fit right in. A simple baking mix makes the dough quick to prepare, and wrapping string cheese in the dough is an easy, hands-on activity kids enjoy.

I attempted a video tutorial for assembling these breadsticks, but trying to film with two energetic young helpers in the room turned into chaos. One provided a running commentary, the other quietly disappeared with finished breadsticks, and the lighting was poor—so I’ll try filming again another day when my assistants are at school.

Cheese Stuffed Breadsticks

These cheese stuffed breadsticks are almost as fun to make as they are to eat.



  • Total Time:
    8 minutes

Ingredients

  • 2 1/4 cups baking mix, plus a little for dusting
  • 2/3 cup milk
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 8 pieces string cheese
  • 1 tablespoon butter, melted (optional)
  • 1 cup pizza sauce, optional for dipping

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. In a bowl, stir together the baking mix, Italian seasoning, and salt. Add the milk and stir until combined to form a soft dough.
  3. Generously dust your work surface with a little baking mix. Turn the dough out and knead about 15 times. Shape the dough into a ball, then roll it into a rectangle about 1/4″ thick.
  4. Cut the dough into 8 smaller rectangles. Place a string cheese stick in the center of each piece, then fold the dough around the cheese. Stretch the dough as needed to completely cover the cheese, and pinch the seams and ends to seal the breadstick well.

  7. Place the stuffed breadsticks on a baking sheet lined with parchment paper or a silicone mat. Bake for 12–15 minutes, or until golden brown.
  8. Remove from the oven and brush lightly with melted butter, if desired. Serve warm with heated pizza sauce for dipping.

Notes

The cheese inside will be VERY HOT right out of the oven. Allow the breadsticks to cool for a few minutes before serving to children, or cut them in half to help them cool faster.
