Ingredients

  

  • 8 medium potatoesbaked
  • 2 cups shredded cheddar cheesedivided
  • ¾ cup sour cream
  • ½ cup milk
  • 1 ½ teaspoon pepper
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • green onionschopped
  • 4 slices baconcooked and crumbled

Instructions

  • Preheat oven to 400°F.
  • Wash and poke holes in 8 medium potatoes, then wrap each potato in aluminum foil.
  • Bake for about 1 hour, then remove from the oven and let the potatoes cool for about 5 minutes.
  • Slice each potato lengthwise and scoop out the flesh into a medium bowl.
  • Mash the potato flesh until mostly smooth, then stir in the sour cream.
  • Add milk, garlic powder, onion powder, salt, and pepper, mixing until combined.
  • Stir in 1 cup of shredded cheddar cheese.
  • Fold in one piece of crumbled bacon, then transfer the mixture to a casserole dish.
  • Top the casserole with the remaining cheese, the rest of the crumbled bacon, and chopped green onions.
  • Cover with foil and bake about 20 minutes. Remove the foil and bake an additional 5 minutes, or until the cheese is melted and bubbly.
