Healthy Weekly Meal Plan featuring Thai Coconut Potsticker Soup, Slow Cooker Mac and Cheese, Mexican Chicken and Quinoa Stuffed Peppers and more.
Happy Saturday! This weekend is all about family — no work for me, and I’m excited to spend time with the kids. We’ll be selling Girl Scout cookies, enjoying playdates, going bowling and getting ready for Valentine’s Day.
Do holidays feel more special to you now that you have children, or do they add stress? For me, Valentine’s Day is fun because of the kids. I’ll be making heart-shaped treats for their classroom parties. Last night the girls and my husband attended the Father-Daughter dance at the high school. My daughters are the rare kind who don’t like having their hair done, so convincing them to get their hair curled turned into a small battle. They also didn’t want to take a photo before leaving, which drove me a little crazy. On the bright side, while they were out I managed to get a lot of work done and tidy the house. I do love the quiet time an empty house brings.
They returned from the dance happy, with necklaces and a photo they took together. That’s the memory I wanted — simple and sweet.
I hope this week’s meal plan gives you dinner inspiration. Scroll down for the recipes I’ve picked for each night. If you try any of them, let me know how they turn out. I’ll be back Monday with a delicious Chicken Pot Pie recipe and a cookbook giveaway from America’s Test Kitchen.
Enjoy your weekend!
