Smoked Turkey Brine with Coca-Cola for Juicy Flavor

This Smoked Coca-Cola Turkey Brine recipe uses a sweet, savory Coca-Cola brine to produce a tender, flavorful smoked turkey. If this is your first time brining a turkey with cola, it won’t be your last—the soda adds a subtle sweetness and helps keep the meat moist.

I love smoking holiday meals. I made this turkey on a Pit Boss Pro 1100, but you can use any smoker—just know your smoker’s behavior and adjust times and temperatures accordingly.

Coca-Cola Brine Recipe Ingredients:

  • Turkey
  • Coca-Cola – You can swap in any dark soda (Diet Coke, Root Beer, Dr. Pepper, or Coke Zero). The choice will slightly change the flavor but will still work.
  • Worcestershire Sauce
  • Brown Sugar
  • Minced Garlic
  • Salt
  • Ice

Turkey Butter Injection Ingredients:

Safely thaw your turkey and remove the innards.

  • Butter
  • Minced Garlic

How To Make Smoked Coca-Cola Turkey Brine:

Place the turkey in a cooler or large container.

In a bowl, mix the brine: start with Coca-Cola and stir in Worcestershire sauce, brown sugar, minced garlic, and salt.

Pour the mixture over the turkey in the cooler.

After adding the initial mixture, add more Coca-Cola and ice until the turkey is fully submerged. If the bird is not completely covered, you’ll need to flip it periodically so the brine reaches all surfaces.

Keep the brining turkey refrigerated or surrounded by ice to maintain a safe temperature and prevent bacterial growth.

When ready to smoke, remove the turkey from the brine and set it on a pan to dry while you prepare the rest.

How To Make Butter Injection for Coca-Cola Turkey:

Melt one stick of butter with minced garlic in a bowl to prepare the butter injection.

Use a heavy-duty injector to add the melted butter mixture into the breast and thighs. Minced garlic can clog the injector, so work slowly and wipe the needle as needed.

How Long To Cook A Turkey

Smoking time varies by smoker and bird size. Rather than relying on clock time alone, always cook to internal temperature. Typical approaches:

  • Start smoking low (225°F) for a couple of hours, then raise to 325–350°F to finish.
  • 225°F: ~30 minutes per pound.
  • 250°F: ~25 minutes per pound.
  • 325°F: ~12 minutes per pound.

For example, a 15-pound turkey at 225°F would take about 7.5 hours. The critical goal is an internal temperature of 165°F measured with a reliable meat thermometer.

How To Thaw A Turkey

Thawing time depends on size and method. Follow food safety guidelines and keep the turkey chilled while thawing. Use the manufacturer’s or USDA recommendations as a guide.

How To Smoke A Coca-Cola Brined Turkey:

After injecting, season the turkey all over. I used a mix of Montreal steak seasoning, seasoning salt, and garlic salt—use your preferred blend.

Place a stick of butter inside the cavity to add moisture and flavor.

Fire up your smoker and add your choice of pellets. I used a combination of mesquite and a fruit blend.

Cook low and slow. I smoked at 225°F for about five hours, then increased to 250°F for the final hour. Remove the turkey once the internal temperature reaches 165°F. Let it rest before carving.

How To Store Leftover Turkey

Once cooled, store leftover turkey in an airtight container or zipper bag in the refrigerator for up to five days. For longer storage, freeze in airtight containers or freezer bags for up to three months. Portioning and vacuum sealing extend freshness and make reheating easier.

What To Serve With Smoked Turkey:

Classic sides pair beautifully with smoked turkey: mashed potatoes, stuffing, green bean casserole, rolls, and smoked or grilled vegetables complement the smoky, sweet flavors. Desserts and smoked appetizers also work well to round out the meal.

The Best Leftover Smoked Turkey Recipes:

Leftover smoked turkey is incredibly versatile—use it in soups, pot pies, casseroles, tacos, or on a griddle for sandwiches. It keeps well and adds great flavor to many dishes.
