Instructions

  1. Spray a 4-quart crock pot with cooking spray.
  2. Place the chicken thighs (or pieces of chicken breast) in the crock pot in an even layer.
  3. In a medium saucepan over medium-high heat, warm the heavy whipping cream until it begins to steam, then reduce to medium.
  4. Add the butter and grated Parmesan cheese to the cream, whisking until the butter and cheese melt and the sauce is smooth. Season with salt and pepper to taste.
  5. Pour the Alfredo sauce over the chicken in the crock pot, covering the pieces evenly.
  6. Cover and cook on low for 4–6 hours or on high for 2–3 hours. Stir once about halfway through cooking to ensure even heat and sauce distribution.
  7. When the chicken is cooked through and the sauce is hot and creamy, serve the chicken and sauce over cooked fettuccine and garnish with extra grated Parmesan.

  • For a lighter version, use a reduced-fat cream product, but texture and flavor will vary.
