Ingredients

  • For the Filet Mignon:
  • 2 tablespoons extra-virgin olive oil

  • 2 filet mignons (6 ounces each)

  • salt and black pepper, to taste

  • For the Mushrooms:
  • 1 cup baby bella mushrooms, sliced

  • 1/4 cup red wine (Merlot is a great choice)

  • pinch of salt

Directions

  • For the Filet Mignon:
  • Preheat the oven to 400° F / 200° C.
  • On the stovetop, heat 2 tablespoons of olive oil in an ovenproof skillet over medium-high heat. Sear the filets for about 4 minutes per side, until a golden crust forms.
  • Transfer the skillet to the oven and continue cooking for about 7 more minutes for a medium to medium-well finish. Adjust time slightly for your preferred doneness.
  • Remove the filets from the oven and let them rest on a cutting board or plate for about 7 minutes before slicing.
  • For the Mushrooms:
  • Using the same skillet, add the sliced mushrooms and the red wine. Sauté over medium-high heat for 5–6 minutes, or until the mushrooms are tender and the wine has reduced slightly.
  • Taste and add a pinch of salt if needed, then toss to combine.
  • Remove from the heat and spoon the mushrooms over the rested filets.
