- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup diced celery
- 1 1/2 teaspoons kosher salt
- Fresh black pepper to taste
- 1/2 teaspoon poultry seasoning
- 1/4 cup flour
- 1/3 cup dry sherry (optional)
- 6 cups chicken broth
- 2 cups cooked, cubed or shredded turkey
- 3/4 cup heavy cream (omit if freezing)
- 2 cups cooked wild rice (or white or brown rice)
- Fresh parsley for garnish
Instructions
- Add the butter and olive oil to a dutch oven or large pot over medium heat. Sauté the onion, carrots and celery for 7–8 minutes, until softened. Stir in the salt, pepper and poultry seasoning.
- Sprinkle in the flour and cook for 1 minute while stirring to coat the vegetables. Pour in the sherry to deglaze the pan, scraping up any browned bits from the bottom.
- Slowly add the chicken broth, then stir in the turkey. Bring the soup to a simmer and cook about 20 minutes until the soup thickens slightly. Stir in the heavy cream (if using) and the cooked rice, and simmer 5 more minutes to warm through.
- Taste and adjust seasoning as needed. Serve garnished with fresh parsley, if desired.
