Gluten-Free Fortune Cookies Recipe for Special Occasions

Chinese New Year begins on the 19th of this month. To celebrate the year of the goat, try this Gluten Free Good Fortune Cookies recipe—an elegant twist on traditional almond cookies that symbolize coins and bring wishes of prosperity.

These are not the folded fortune cookies with paper fortunes inside. Instead, they are sandwich-style almond cookies filled with a rich chocolate ganache. In Chinese culture, almond cookies represent coins, so pairing two together feels doubly lucky. They’re easy to make, naturally gluten free, and perfect for sharing during the holiday.

One simple trick I use is adding a splash of gluten-free Tamari to the ganache. The Tamari deepens the chocolate flavor and adds a subtle savory note that heightens the overall taste.

May the year of the goat bring you prosperity—and may you enjoy these delightful cookies. Gung Hay Fat Choy!

Gluten Free Good Fortune Cookies Recipe

By Gluten Free & More
Prep Time: 20 minutes
Cook Time: 17 minutes
Total Time: 42 minutes
Servings: 24 cookies

Ingredients

  • 2 large egg whites
  • Pinch kosher salt
  • 1 cup sugar
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon pure almond extract
  • cups almond flour or very finely ground almonds
  • 24 whole blanched almonds
  • ¾ cup semisweet chocolate chips
  • 2 tablespoons heavy cream
  • 1 tablespoon gluten free San-J Tamari

Instructions

  • Preheat the oven to 325°F (165°C). Line two baking sheets with parchment paper or silicone baking mats.
  • In the bowl of an electric mixer, beat the egg whites and salt on high speed until soft peaks form. With the mixer running, add the sugar gradually and continue beating until the mixture is very thick, about 2 to 3 minutes. Beat in the vanilla and almond extracts. Fold in the almond flour with a large spatula until evenly combined; the batter will be thick.
  • Drop tablespoon-sized mounds of batter onto the prepared sheets, spacing them about 2 inches apart. Place a whole blanched almond on half of the cookies. Bake 15 to 17 minutes, until set and lightly browned. Cool on the pan for 5 minutes, then transfer to a wire rack to finish cooling.
  • Make the ganache by combining the chocolate chips, heavy cream, and Tamari in a small saucepan over low heat. Stir until the chocolate melts and the mixture is smooth.
  • Spread the chocolate ganache on the flat side of the cookies without almonds. Top with the almond-topped cookies, almond side up, and press gently to form sandwich cookies. Allow the ganache to set before serving.
