I hope you’ve been enjoying the sunshine. I’ve been making the most of summer myself — it’s the season for easy, cooling cocktails. With several birthdays in July, including my dad’s and mine, I wanted to celebrate with a standout cocktail: frozen pineapple margaritas. I’ve only shared a couple of cocktails on the blog before, so it felt like the right time to add another summer favourite.

Frozen pineapple margaritas
This frozen pineapple margarita recipe was inspired by a version I tried from Foolproof Living. It’s a brilliant party cocktail for hot days — using frozen pineapple keeps the drink cold and slushy without diluting the flavour. Expect bright, tropical pineapple, zesty lime and the distinctive warmth of tequila, rounded out by a hint of orange liqueur. The result is a sweet, fruity and refreshing cocktail that guests will return to again and again.


What ingredients do I need to make frozen pineapple margaritas?
This margarita is tequila-based — I use gold tequila, though blanco (silver) tequila is also commonly used and works well. Along with tequila, you’ll need an orange liqueur such as Cointreau or triple sec, plenty of freshly squeezed lime juice, frozen pineapple chunks and cane sugar syrup. The sugar syrup is optional but helps balance the tart lime and bring out the pineapple’s sweetness; if you don’t have syrup, a couple of tablespoons of brown sugar will do in a pinch.

Garnishes make the presentation: lime slices or wedges, pineapple chunks and a sprig of fresh mint all work beautifully. For the glass rim I love a mix of sea salt and chilli powder — it plays wonderfully with the sweet pineapple, tart lime and tequila. If salt isn’t your thing, use sugar on the rim and add a little citrus zest for a decorative touch.

Making the pineapple margaritas
These margaritas are straightforward to prepare. Add the tequila, orange liqueur, lime juice, sugar syrup (or sugar) and frozen pineapple to a blender and blend until smooth. Rim the glasses with your chosen salt or sugar mix — a lime wedge helps the seasoning stick — then pour the blended margarita into the glasses. Because the pineapple is frozen the drink will already be cold; you can add crushed ice if you prefer a thicker texture. Garnish and serve immediately.

Frozen Pineapple Margaritas
Equipment
- Blender
Ingredients
- 115 ml tequila
- 40 ml Cointreau or triple sec
- 30 ml cane sugar syrup
- 80 ml freshly squeezed lime juice
- 300 g frozen pineapple chunks
For the garnish:
- 2 small limes (one sliced, one cut into wedges)
- 1 medium pineapple slice
- 1 small bunch fresh mint
For the rim:
- 2 tbsp sea salt
- ½ tsp chilli powder
Instructions
- Cut one lime into slices and the other into wedges. Set aside for garnish and rimming.
- Place tequila, Cointreau (or triple sec), cane sugar syrup, lime juice and frozen pineapple chunks in a blender. Blend until smooth.
- Mix sea salt and chilli powder. Run a lime wedge around the rim of each glass and dip into the salt–chilli mix. Pour the margaritas into the prepared glasses, garnish with lime, pineapple and mint, and serve immediately.
Notes: Recipes are developed and tested using metric measurements. For best results use digital scales. A US customary conversion may be provided but has not been separately tested.
