Course: Snack
Cuisine: American
Ingredients
- 2/3 c. pumpkin puree
- 1/4 c. peanut butter
- 2 lg. eggs
- 3 c. whole wheat flour more as needed
Instructions
-
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat and set aside.
-
In a stand mixer fitted with the paddle attachment, combine the pumpkin puree, peanut butter, and eggs. Beat on medium-high for 1–2 minutes until well blended. With the mixer on low, add 2 1/2 cups of the flour gradually, mixing until just combined. Add the remaining flour a quarter cup at a time until the dough is no longer sticky.
-
Turn the dough onto a lightly floured surface and knead 3–4 times until it holds together. Roll the dough to about 1/4-inch thickness and cut into shapes with cookie cutters. Arrange the cut biscuits on the prepared baking sheet.

-
Bake for 20–25 minutes, or until the edges turn golden brown. Remove from the oven and allow the biscuits to cool completely on a wire rack.

-
Cook’s note: Baking time will vary with the size and thickness of the treats. Adjust serving size based on the shapes and cutters you use.
