Banana Cookies
Ingredients:
- ¾ cup shortening
- ¾ cup brown sugar
- 1 large egg
- 1 teaspoon baking soda
- ½ teaspoon vanilla
- 2 ripe bananas, mashed
- ¼ teaspoon salt
- 2 cups all-purpose flour
Instructions:
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- In a mixing bowl, cream together the shortening and brown sugar until light and smooth.
- Add the egg and vanilla, mixing until combined.
- Stir in the mashed bananas.
- Whisk together the flour, baking soda, and salt in a separate bowl, then gradually add to the wet ingredients until just combined. Avoid overmixing.
- Drop rounded teaspoons of dough onto the prepared baking sheet, spacing cookies about 2 inches apart.
- Bake at 375°F for about 10 minutes, or until edges are set and lightly golden.
- Cool on the baking sheet a few minutes, then transfer to a wire rack to cool completely before frosting.
Frosting
- 4 tablespoons brown sugar
- ½ teaspoon vanilla
- 4 tablespoons cream or milk
- 4 tablespoons butter
- Powdered sugar, as needed for consistency
Directions:
- In a small saucepan, combine the brown sugar, milk (or cream), and butter. Bring to a gentle boil while stirring constantly to dissolve the sugar and incorporate the butter.
- Remove from heat and let the mixture cool slightly.
- In a separate bowl, add the vanilla to powdered sugar. Gradually stir in the cooled brown sugar mixture until you reach a spreadable consistency. Add more powdered sugar if the frosting is too thin, or a splash of milk if it’s too thick.
- Spread the frosting onto cooled cookies. Allow frosting to set before serving.

These banana cookies are soft, buttery, and lightly sweet, with a simple brown-sugar frosting that complements the banana flavor. They’re perfect for using ripe bananas and make a great treat for snacks, lunches, or sharing with friends.
