Slow Cooker Pumpkin Chicken Stew Recipe for Fall Comfort

I received this pumpkin chicken stew recipe from my friend Jenny at Gluten Free Birmingham. Pumpkin often appears in baked goods in my kitchen, but this savory slow cooker stew is a wonderful way to enjoy pumpkin for dinner during the cooler months. It’s easy to prepare, comforting, and makes a generous batch that works well for family meals or leftovers.

Ingredients

  • 3 boneless skinless chicken breasts
  • 2 cups pumpkin puree
  • 28 ounce can diced tomatoes
  • 2 small cans tomato sauce with roasted flavor
  • 2 small cans diced chilies
  • 1 bag frozen shoe peg corn
  • 2 cups fresh spinach add during last 30 minutes of cooking
  • 2-3 tsp. cumin
  • 1 tsp. salt

Instructions

  • Place all ingredients except the spinach into the slow cooker. Cook on low for 6–8 hours or on high for about 4 hours, until the chicken is cooked through and tender.
  • About 30 minutes before serving, add the fresh spinach and stir it into the stew until wilted and evenly distributed.

Notes

I cook whole chicken breasts in the crockpot; after several hours the meat shreds easily with a fork when you stir the stew. If you prefer, cut the raw chicken into bite-sized pieces before adding it to the slow cooker.
