Apples, bacon, and cheese combine to make an easy, delicious fall breakfast when broiled on English muffins.
Recently I had a surplus of English muffins after my son planned to make English muffin pizzas for dinner and for his FACS class at school. Teenagers and large appetites meant I bought far more than we used, and with one sudden change of plans the muffins sat in the fridge waiting for a purpose. That led me to see English muffins in a new light — beyond pizzas and eggs Benedict.
After surveying the fridge I found apples, bacon, and a spreadable Gouda cheese wedge. Those ingredients felt perfectly autumnal together, so I layered them on toasted English muffins and broiled them for a warm, flavorful fall breakfast. The combination of crisp apple, creamy sharp cheese, and smoky bacon was an immediate hit with my family.
If you enjoy apples with sharp cheese, these muffins will feel right at home. The sweet-tart crunch of apples pairs beautifully with a creamy, slightly tangy Gouda spread, and bacon adds the savory, smoky counterpoint that makes the whole bite sing. Serve with eggs or enjoy on their own for an easy, elevated morning meal.

These Apple, Bacon, and Cheese English Muffins are:

You can use your favorite sharp cheese spread; sharp cheddar would also work well. Below is a clear, streamlined recipe so you can recreate these quickly.
Apple Bacon Cheese English Muffins
Ingredients
- 6 slices bacon
- 2 apples, chopped
- 3 Tablespoons shallot, minced
- 1 Tablespoon brown sugar
- 4 wedges Laughing Cow Gouda cheese spread (or other sharp cheese spread)
- 4 English muffins, split
Instructions
- In a skillet, cook the bacon over medium-high heat until crisp, about 6–7 minutes. Remove bacon to paper towels and discard excess grease.
- Add the chopped apples, minced shallot, and brown sugar to the skillet. Cook and stir until the apples begin to soften and the shallots caramelize, about 6–7 minutes. Remove from heat, crumble the bacon, and stir it into the apple mixture.
- Preheat the oven to broil.
- Spread each English muffin half with half (or more) of a cheese wedge. Top with the apple and bacon mixture, arrange on a baking sheet, and broil 2–3 minutes until edges are golden and crisp. Serve warm.
