Ingredients

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3 skinless, boneless chicken breasts, sliced in half to make thinner pieces
  • 2 shallots, finely chopped
  • 4 cloves garlic, minced
  • 1 cup diced zucchini
  • 1 1/2 cups grape tomatoes, halved
  • 1/4 cup fresh basil, finely chopped
  • 3/4 cup chicken broth
  • 1 1/2 cups heavy cream (35% whipping cream)
  • 3/4 cup grated Parmesan cheese

Instructions

  1. Heat the butter and olive oil in a large stovetop skillet over medium heat until the butter melts.
  2. Season the chicken halves generously with salt and pepper. Place them in the skillet and cook 4–5 minutes per side, until browned and cooked through.
  3. Remove the chicken to a plate and tent with foil to keep warm.
  4. Add the shallots and garlic to the pan and sauté, stirring constantly, until softened, about 2 minutes.
  5. Add the zucchini, grape tomatoes, chicken broth, and cream. Continue to cook and stir for about 2 minutes, until the liquid begins to boil.
  6. Stir in the basil and Parmesan until the cheese melts into the sauce.
  7. Return the chicken to the pan, reduce heat to medium-low, and simmer about 5 minutes, until the sauce thickens slightly.
