10 Minute Spicy Pasta

Incredibly quick and easy spicy pasta sauce ready in 10 minutes — perfect for busy evenings!

Ingredients

  • 250 g gluten free pasta
  • 3 tbsp olive oil
  • 250 g cherry tomatoes
  • 4 large garlic cloves, crushed
  • handful olives, chopped
  • pinch chilli flakes
  • 1 tsp paprika
  • handful fresh basil, chopped

Instructions

  • Place the pasta in boiling water and cook according to the packet instructions, around 10 minutes.
  • While the pasta cooks, heat a large pan with the olive oil and add the cherry tomatoes. Fry for about 5 minutes — keeping the tomatoes whole speeds things up.
  • Squash the tomatoes with a fork, then add the crushed garlic, chopped olives, chilli flakes and paprika. Cook together for a few minutes so the flavours meld.
  • Remove the pan from the heat, stir in the chopped basil and allow it to wilt into the sauce.
  • Using tongs, transfer the pasta directly from the boiling water into the sauce, toss to combine and serve with extra fresh basil on top.

Notes

For a non-vegan option, add cooked chicken or prawns to the finished dish. The sauce freezes well in portions for quick meals later.
